Chicken Quesadillas-Step by Step-Mexican Recipes, Easy Chicken Recipe, for the Crock Pot

I have used this recipe many times for a quick and easy dinner. On a busy day, when you need a hot meal, but don't have the time. With a few simple ingredients, and a crock pot, dinner will be ready in no time. Serve with my other recipes. Mexican rice, tortilla chips and salsa for a complete meal. Wonderful main dish, but can be a snack idea, or horderves for any party. They can be made ahead of time, and frozen for later. As an after school snack. Just pop in the microwave, and they are ready, for your child to enjoy. Great for days when its too hot to cook.

Yields: Serves four people

Ingredients

  • 1 pound chicken breast, skinless and boneless
  • 1 tablespoon vegetable oil, I prefer coconut oil,
  • 1 package fajita mix, taco bell or any other
  • 12 tortillas, flour or corn
  • 2-3 cups fiesta cheese, shredded
  • 1 small vidalia onion, diced, optional

Instructions

  1. Place chicken breast into crock pot. Cover with 2-3 cups of water, add seasoning packet, and 1 tablespoon of oil. Set crockpot on low setting and let simmer for 3 hours until very tender.
  2. When chicken is done, remove from crockpot and shred into small peices.
  3. Place tortillas on a cookie sheet. Layer chicken and cheese, top with diced onion (optional) sweet, or vidalia, cover all with another tortilla. Continue until all ingredients are used.
  4. Cover all with aluminum foil, place in 350 degree oven, for about 10-20 minutes until cheese melts. Cut into triangles with a pizza cuter.
  5. Serve with shredded lettuce, salsa, and sour cream on the side. Tortilla chips make a nice side, as well as spanish rice.

  7. These can also be served as an hor dourves. Cut into smaller peices with salsa or any dipping sauce of your choosing.
  8. Quesadillas freeze very well. Allow to cool, place in ziplock bags and freeze up to a month.

A Simple Variation

A Simple variation on the same recipe, chicken tacos. Cook as instructed above. Instead of shredding, slice chicken into strips, place on tortilla. Top with cheese, lettuce, tomato, and sour cream.

Another Variation, Fajitas

Cook in the same way, substitute fajita mix for sofrito sauce. Instead of shredding, slice into thin strips. Saute sliced peppers, and onions in a separate pain, lightly oiled with coconut oil. Place chicken, peppers, and onion on tortilla. Serve with any toppings you prefer.

Chicken Fajitas can also be cooked on a grill. Marinate chicken in fajita mix, and oil. Grill until no longer pink. Saute peppers, and onions in light oil. Serve the same.
