Ideas for a Pork Loin

Pork loin is as versatile as chicken, or hamburger. It cooks up as easily as the other meats do. You can substitute pork in just about every recipe that you use. Not only does it make good barbecue, but tacos, and enchiladas as well.

Buy a pork loin, enough for three meals. Separate into three sections. First section, leave whole, for a roast. Second section, slice into pork chops, third leave whole for pulled pork, or tacos. This will save money, as you aren't paying a butcher to do something you can do yourself. Place in plastic zip lock bags, and freeze. Pork will keep in a freezer, at least a month, or more. It will also save time, thaw only what you need for a given meal.

Yields: 1 pound will yield 12 tacos

Ingredients

  • 1 pound pork loin
  • 1/2 cup water
  • 1 packet onion soup mix
  • Variations: for tacos
  • 1 jar sofrito mix
  • 1/2 head shredded lettuce
  • 1 small tomato
  • 1 bag shredded cheese, fiesta or taco
  • 1 container sour cream
  • 12 flour tortillas
  • Variations: for enchiladas
  • 1 jar sofrito mix
  • 12 flour tortillas
  • 1 bag shredded, fiesta cheese
  • optional sides: lettuce, tomato, sour cream

Instructions

  1. Place pork loin in crock pot, add a 1/2 cup water. Put onion soup mix, all over pork loin roast. Set temperature to high, cook about three hours, until no longer pink. Internal temperature should reach 170 degrees.
  2. Remove loin from crock pot, and shred into bite size pieces. Return to crock pot. Pour sofrito sauce over meat, and continue to cook until sauce is absorbed.
  3. For tacos: fill taco shells with meat mixture, top with cheese, lettuce, tomato, and sour cream. Mexican rice, tortilla chips and salsa complete the meal.
  4. For enchiladas: fill taco shells with meat mixture, roll, and place seam side down, into 9x13 pan. Top with shredded cheese. Cover with aluminum foil. Place into 350 degree oven, for about 20 minutes until cheese melts. Serve with tortilla chips, and refried beans. Garnish with lettuce, tomato and sour cream. Enjoy!
  5. Chicken can be substituted for the pork loin. 1 pound of chicken tenders, cook the same as per instructions.
  6. Taco seasoning can be substituted, instead of the sauce, proceed the same.
